If you’re looking for a meal that is guaranteed to dazzle, virtually anything with lamb will do the trick. Paired with a selection of healthy wines, such as a Natura Carmenere, you’ll have a spread that rivals that of a Michelin-starred restaurant.
Here’s an idea from Food Network’s Michael Chiarello that we love. There are only a few ingredients involved, and though the name makes it sound complicated it’s simple to make!
1 cup coarse salt
1 cup fresh mint
2 racks of lamb, about 1 ½ lbs. each
Ground black pepper
¼ cup extra virgin olive oil
½ cup dry red wine, such as Natura Carmenere
Preheat the oven to 375 degrees.
Dig out your mortar and pestle to crush the mint and salt together until the salt is fine and green in appearance.
Season the lamb with the salt-mint mixture and freshly ground black pepper.
Using an oven-proof, deep-sided skillet, heat the olive oil until sizzling. Add the lamb, skin side down, and cook until browned. Turn the lamb, and place the skillet into the oven.
Cook for 7 to 8 minutes for medium-rare lamb. Remove from the oven and place the lamb racks on a chopping board, covering with foil. Let them sit for about 5 minutes.
Make a glaze using the excess fat that remains in the skillet. Place the skillet on the stove-top, adding the red wine and cooking over medium heat. Let the mixture reduce until it reaches a syrupy consistency.
Slice the lamb racks between the ribs to create “lollipops” and place on a warmed platter, drizzling the glaze over them.
Sounds tasty, doesn’t it? Now imagine it with a nice fresh salad, a side of rice pilaf or seasoned potatoes, and a glass of one of our healthy wines.
It’s the perfect meal when you’re trying to impress, whether you’re on a date or you’ve invited the boss over for dinner. Easy but with the air of sophistication, lamb lollipops with mint salt and a Natura Carmenere are a definite crowd-pleaser.
